Oatmeal Chocolate Chip Breakfast Cookies

Ingredients:

  • 3/4 cup creamy peanut butter

  • 2 - 4 Tablespoons honey

  • 1 tsp vanilla extract

  • 1 - 3 TBSP chia seeds

  • 3/4 cup old fashioned oats

  • 1/3 - 1/2 cup dark chocolate chips

  • 2 - 4 TBSP raisins (optional)

Instructions:

  1. Place the peanut butter, honey and vanilla in a microwavable bowl and microwave the ingredients for 20 seconds. Taste and add more honey or vanilla to reach desired taste.

  2. Stir the mixture until well combined, then add in the remaining ingredients. Stir well and ensure everything is well incorporated. If it's too runny, add more oats. If it's too dry, add more honey and peanut butter.

  3. Roll the mixture into desired size balls and place the balls on a baking tray or plate. Press the balls flat. Place them in the fridge until set.

  4. Take out a few minutes before serving. Serve and enjoy.
