Potato Salad
Ingredients:
1 - 2 potatoes, cubed
Olive oil, be generous as the potatoes will soak up the oil
A few dashes black pepper
A few dashes Pink Himalayan salt
1/4 - 1/2 red onion, diced
1 radish, diced
1 teaspoon Basil
1 teaspoon Oregano
Instructions:
Cook the potatoes (boil or microwave) and drain any water (if you boil them).
Transfer the potatoes to a bowl and mix all other ingredients. Stir well.
Refrigerate then enjoy hot or reheated.
