Potato Salad

Ingredients:

  • 1 - 2 potatoes, cubed

  • Olive oil, be generous as the potatoes will soak up the oil

  • A few dashes black pepper

  • A few dashes Pink Himalayan salt

  • 1/4 - 1/2 red onion, diced

  • 1 radish, diced

  • 1 teaspoon Basil

  • 1 teaspoon Oregano

Instructions:

Cook the potatoes (boil or microwave) and drain any water (if you boil them).

Transfer the potatoes to a bowl and mix all other ingredients. Stir well.

Refrigerate then enjoy hot or reheated.
