Spaghetti Squash Protein Bowl

This is a great dinner idea but will take a bit longer since you have to cook the spaghetti squash.

You will need an oven for this recipe.

Ingredients:

  • 1 spaghetti squash

  • 1 pound of ground beef (preferably 80-85% lean)

  • 1 can low sodium black beans, drained well

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 white onion, diced

  • 1 cup cheddar cheese, shredded

  • a few sprinkles of cilantro

  • a few sprinkles of basil

  • salt and pepper to taste

  • extra virgin olive oil

Instructions:

Preheat oven to 350 degrees.

Slice spaghetti squash in half and take out the seeds. Sprinkle a small amount of olive oil, salt and pepper on each of the two halves of the squash. Put both halves upside now on a cookie sheet and place in oven. Cook for 35-40 minutes, checking frequently. Squash should be tender to the touch when it is done.

Cook ground beef in a frying pan.

Cook the peppers and onions in a separate pan.

Combine the ground beef, beans, peppers, onions, and spices in one pan and mix well.

Take squash out of the oven when it is cooked and turn each half over on the cookie sheet. Using a fork, scrape the inside of the squash so you get strings of the squash pulled away from the skin. Place these strings in a bowl (that is your spaghetti).

Once you have hollowed out the squash, layer the meat/bean mixture with the spaghetti squash in the squash shell. Top with shredded cheese and enjoy!
