Farro Tofu Bowl

Ingredients:

  • 1 cup farro, rinsed

  • 2 cups vegetable broth (you can also use water if you do not have broth)

  • 1/2 red onion, chopped

  • 2 tsp minced garlic or 1 clove garlic, minced

  • 1 roma tomato, chopped

  • 1 cup spinach

  • 1 cup kale

  • 1 tbsp extra virgin olive oil

  • 1/2 block extra firm tofu, drained, cubed

  • 1/4 can black beans, drained

  • 1/4 can garbanzo beans, drained

Instructions:

  1. Cook farro according to directions (if using raw farro, rinse first then add 1 cup of farro to 2 cups of boiling vegetable broth or water, stir, place cover on the saucepan, turn the heat to low and stir occasionally - it normally takes about 20-25 minutes to cook raw farro). If using instant farro, cook according to package instructions.

  2. Chop red onion, kale, spinach, roma tomato, garlic and set aside.

  3. Drain excess water from 1/2 block of tofu and cut into 1/2 inch cubes. Set aside.

  4. Place both types of beans in a bowl and stir.

  5. Add farro to a bowl then add all other ingredients on top. Drizzle with extra virgin olive oil.

  6. Stir and enjoy!
