Salmon Macaroni Salad

Ingredients:

  • 1 can salmon, 14.75 ounces

  • 3 cups cooked elbow macaroni (I used Barilla whole grain)

  • 1/4 cup plain Greek yogurt

  • 2 tbsp Dijon (or plain yellow) mustard

  • 1 tsp garlic, minced

  • 1 stalk celery, minced

  • 1/8 cup red onion, minced

  • 1 medium radish, minced

  • 1 tbsp parsley, (dried or minced if fresh)

  • 1/4 tsp dill

  • 1/4 tsp red pepper flakes

  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to instructions on the package.

  2. Drain canned salmon and place in a bowl. Mash thoroughly with a fork.

  3. Add yogurt, dijon mustard, celery, radish, parsley, red onion, lemon juice and garlic. Stir until well mixed.

  4. Add dill and red pepper flakes and continue to mix.

  5. Add salt and pepper to taste.

  6. Drain the pasta and add recommended amount to the salmon mixture. Mix well and enjoy!
