Avocado Egg Salad

Ingredients:

  • 1 ripe avocado

  • 6 large hard boiled eggs

  • 1/4 cup plain Greek yogurt

  • 1/8 cup lemon juice (or a good squeeze from half a fresh lemon)

  • 1 medium radish, minced

  • 1 green onion, minced

  • 2 tsp dijon mustard

  • 1/4 tsp dill

  • 1/2 tsp minced garlic

  • 1 tbsp parsley

  • black pepper to taste

  • garlic salt, to taste

  • dash of cayenne pepper

Instructions:

  1. Peel avocado and discard the skin and the seed. Place in bowl

  2. Peel hard boiled eggs and place in bowl with avocado.

  3. Mash avocado and eggs until broken but still lumpy.

  4. Add yogurt, lemon juice, radish, green onion, dijon mustard and stir well.

  5. Add dill, garlic, parsley and stir.

  6. Add black pepper and garlic salt to your taste liking.

  7. Finish with a dash of cayenne pepper, mix well and enjoy!
