Avocado Egg Salad
Ingredients:
- 1 ripe avocado 
- 6 large hard boiled eggs 
- 1/4 cup plain Greek yogurt 
- 1/8 cup lemon juice (or a good squeeze from half a fresh lemon) 
- 1 medium radish, minced 
- 1 green onion, minced 
- 2 tsp dijon mustard 
- 1/4 tsp dill 
- 1/2 tsp minced garlic 
- 1 tbsp parsley 
- black pepper to taste 
- garlic salt, to taste 
- dash of cayenne pepper 
Instructions:
- Peel avocado and discard the skin and the seed. Place in bowl 
- Peel hard boiled eggs and place in bowl with avocado. 
- Mash avocado and eggs until broken but still lumpy. 
- Add yogurt, lemon juice, radish, green onion, dijon mustard and stir well. 
- Add dill, garlic, parsley and stir. 
- Add black pepper and garlic salt to your taste liking. 
- Finish with a dash of cayenne pepper, mix well and enjoy!
