Blueberry Honey Tofu Pudding

This is a super easy snack to make that is chock full of plant-based protein (and another creative way to use tofu)!

Ingredients:

  • One block extra firm tofu, drained

  • 3/4 cup frozen or fresh blueberries

  • 1/2 - 1 TBSP honey

Instructions:

  1. Place all ingredients In a food processor and blend until smooth.

  2. Enjoy!

Notes:

  • You can also freeze this pudding to make a type of frozen “yogurt”.

  • You can substitute other fruit based on your preferences.
