Blueberry Honey Tofu Pudding
This is a super easy snack to make that is chock full of plant-based protein (and another creative way to use tofu)!
Ingredients:
One block extra firm tofu, drained
3/4 cup frozen or fresh blueberries
1/2 - 1 TBSP honey
Instructions:
Place all ingredients In a food processor and blend until smooth.
Enjoy!
Notes:
You can also freeze this pudding to make a type of frozen “yogurt”.
You can substitute other fruit based on your preferences.
