Chocolate Cherry Rice Bites

Ingredients:

  • 1 cup cooked white rice

  • 1.5 fluid ounces (3 TBSP) tart cherry juice concentrate

  • 1/4 cup dark chocolate chips (preferable with no soy lecithin)

  • 1/4 tsp pink Himalayan salt

Instructions:

  1. Place cooked rice in food processor.

  2. Add tart cherry juice concentrate, dark chocolate chips, and salt and mix until well combined (roughly 20-30 seconds).

  3. With a normal sized spoon, scoop out a spoonful of the mixture and press into a circular bite.

  4. Enjoy!

Makes 10 bites.

Nutrition per one bite:

  • 60 calories

  • 10 grams carbohydrate

  • 1 gram fiber

  • 1 gram protein

  • 2 grams fat

*you can refrigerate these for about 3 days before they become a bit dry.
