Chocolate Cherry Rice Bites
Ingredients:
1 cup cooked white rice
1.5 fluid ounces (3 TBSP) tart cherry juice concentrate
1/4 cup dark chocolate chips (preferable with no soy lecithin)
1/4 tsp pink Himalayan salt
Instructions:
Place cooked rice in food processor.
Add tart cherry juice concentrate, dark chocolate chips, and salt and mix until well combined (roughly 20-30 seconds).
With a normal sized spoon, scoop out a spoonful of the mixture and press into a circular bite.
Enjoy!
Makes 10 bites.
