Strawberry Mint Rice Bites

Ingredients:

  • 1 cup cooked white rice

  • 3 TBSP natural preserves (no high fructose corn syrup)

  • 1/4 tsp pink Himalayan salt

  • 2 fresh mint leaves or 1/2 tsp dried mint

Instructions:

  1. Place cooked rice in food processor.

  2. Add preserves, salt and mint leaves and mix until well combined (roughly 20-30 seconds).

  3. With a normal sized spoon, scoop out a spoonful of the mixture and press into a circular bite.

  4. Enjoy!

Makes 10 bites.

*you can refrigerate these for about 3 days before they become a bit dry.
