Strawberry Mint Rice Bites
Ingredients:
1 cup cooked white rice
3 TBSP natural preserves (no high fructose corn syrup)
1/4 tsp pink Himalayan salt
2 fresh mint leaves or 1/2 tsp dried mint
Instructions:
Place cooked rice in food processor.
Add preserves, salt and mint leaves and mix until well combined (roughly 20-30 seconds).
With a normal sized spoon, scoop out a spoonful of the mixture and press into a circular bite.
Enjoy!
Makes 10 bites.
