Breakfast Cookie
Ingredients:
2 cups quick oats (not instant)
40 grams BiPro Elite vanilla protein powder (NSF Certified), or another whey protein isolate that is certified
1/4 cup almond flour
1 tsp baking soda
1 tbsp cinnamon
1/2 tsp ginger
2 tbsp chia seeds
1 egg
4 ounces unsweetened applesauce
1/2 cup nut butter (creamy)
2 tbsp blackstrap molasses
1 tsp vanilla
1/4 cup dried raisins (or apples); optional but preferred
1/4 cup chopped walnuts; optional but preferred
Instructions:
Preheat oven to 350 degrees F.
Mix dry ingredients in bowl.
Mix wet ingredients in a separate bowl.
Add wet ingredients to dry ingredients and mix well. Add raisins and walnuts if you are including them and mix thoroughly.
Spray a baking sheet with olive or coconut cooking spray and scoop the batter onto the baking sheet (you can also use parchment paper instead of cooking spray).
Scoop batter onto baking sheet and flatten each cookie slightly with a spoon.
Bake for 8-10 minutes (check them every few minutes depending on how efficient your oven is).
Take out of oven and let cool for approximately 10 minutes.
